Banana Chocolate Chip Muffins


1 egg

1/3 cup (80 ml) vegetable oil

1/2 cup (125 ml) sugar

1 cup (250 ml) mashed bananas (1-2 bananas)

1 cup (250 ml) chocolate chips

1 cup (250 ml) flour

1 tsp (5ml) baking soda

1/2 tsp (2ml) salt

1/2 tsp (2ml) cinnamon


  1. Preheat oven to 350º F

  2. Mash bananas in a small bowl

  3. Whisk the oil, sugar and egg together

  4. Stir in the mashed bananas and chocolate chips

  5. In a separate bowl, combine flour, baking soda, salt and cinnamon

  6. Stir dry mixture into banana mixture to moisten – DO NOT OVERMIX

  7. Spoon batter into 12 muffin lined cups

  8. Bake for 15 – 20 minutes

Two muffins were sitting in an oven, and the first one looks over to the second, and says, “man, it's really hot in here”. The second looks over at the first with a surprised look , and answers, “WHOA, a talking muffin!”
