Homemade Pretzels

Ingredients

8ml quick rise yeast
185ml warm water (100F/40C)
1ml salt
8ml sugar
400 - 500 ml flour

25ml butter or margarine (melted for sweet pretzels)
50ml sugar and 10ml cinnamon (mixed)

Egg wash (egg white with a bit of water)
Coarse salt

Method

1. Preheat oven to 425F
2. Mix yeast and warm water in a large bowl until yeast is dissolved.
3. Add sugar and salt. Stir.
4. Add flour in small batches and stir with fork to keep a smooth consistency
(scrape sides periodically with a spatula) until dough forms a smooth ball.
(ensure it is still slightly sticky)
5. Sprinkle clean counter top with some flour.
6. Place dough on this and knead until it is a smooth ball.
7. Divide dough into four or five pieces.
8. Shape dough and place on baking sheet.

Salty Pretzels - brush with egg wash and sprinkle with coarse salt.
Sweet Pretzels - Brush with melted butter then dip pretzel, face down, into sugar mix before placing on pan

9. Place pan into oven and bake for 12 - 15 min
